  1. Crush the digestive biscuits and mix them with melted butter. Press the mixture into the bottom of a pie dish to form the crust.
  2. In a mixing bowl, beat the cream cheese and sugar until smooth. In a separate bowl, whip the whipping cream until stiff peaks form. Gently fold the whipped cream into the cream cheese mixture.
  3. In a small bowl, dissolve the instant coffee in hot water. Dip each biscuit into the coffee mixture and arrange them on top of the crust in the pie dish.
  4. Spread half of the cream cheese mixture over the biscuit layer. Repeat the process with another layer of dipped biscuits and the remaining cream cheese mixture.
  5. Dust the top of the pie with cocoa powder. Cover and refrigerate for at least 2 hours, or until set.
  6. Serve chilled and enjoy!
