Add the diced tomatoes, corn, black beans, and Mexican seasoning to the skillet. Cook for an additional 5 minutes.

In a separate bowl, whisk together the cornmeal, flour, baking powder, salt, milk, and beaten egg until well combined.

Grease a deep baking dish and pour the beef mixture into it. Sprinkle the grated cheddar cheese on top.
