Ingredients
  • 250 gram Carrots
  • 200 gram All-purpose flour
  • 200 gram Sugar
  • 150 milliliter Vegetable oil
  • 4 unit Eggs
  • 2 teaspoon Baking powder
  • 2 teaspoon Cinnamon powder
  • 1 teaspoon Vanilla extract
  • 0.5 teaspoon Salt
  • 300 gram Cream cheese
  • 100 gram Unsalted butter
  • 200 gram Powdered sugar
  • 2 tablespoon Lemon juice
  • 100 gram Chopped walnuts
Instructions
  1. Preheat the oven to 180°C. Grease and flour a cake pan.
  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon powder, and salt.
  3. In another bowl, beat the eggs, vegetable oil, and vanilla extract until well combined.
  4. Slowly add the dry ingredients to the egg mixture and mix until just combined.
  5. Fold in the grated carrots and chopped walnuts.
  6. Pour the batter into the prepared cake pan and smooth the top.
  7. Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.
  8. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.
  9. In the meantime, prepare the cream cheese frosting by beating the cream cheese, unsalted butter, powdered sugar, and lemon juice until creamy.
  10. Once the cake has cooled, spread the cream cheese frosting over the top and sides of the cake.
  11. Decorate with additional grated carrots and chopped walnuts if desired.
  12. Let the cake rest in the refrigerator for at least 1 hour before serving.
  13. Slice and enjoy!
