Carrot cake became popular in the United States during World War II when rationing led to the use of sweet vegetables, like carrots, as a substitute for sugar.

Preheat the oven to 180°C. Grease and flour a cake pan.

In a large mixing bowl, whisk together the flour, sugar, baking powder, cinnamon powder, and salt.

In another bowl, beat the eggs, vegetable oil, and vanilla extract until well combined.

Slowly add the dry ingredients to the egg mixture and mix until just combined.

Fold in the grated carrots and chopped walnuts.

Pour the batter into the prepared cake pan and smooth the top.

Bake in the preheated oven for 40-45 minutes or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer the cake to a wire rack to cool completely.

In the meantime, prepare the cream cheese frosting by beating the cream cheese, unsalted butter, powdered sugar, and lemon juice until creamy.

Once the cake has cooled, spread the cream cheese frosting over the top and sides of the cake.

Decorate with additional grated carrots and chopped walnuts if desired.

Let the cake rest in the refrigerator for at least 1 hour before serving.
