Ingredients
  • 3 piece Ripe bananas
  • 1.5 cup All-purpose flour
  • 1 teaspoon Baking soda
  • 0.5 teaspoon Salt
  • 0.5 cup Unsalted butter
  • 0.75 cup Granulated sugar
  • 1 piece Egg
  • 1 teaspoon Vanilla extract
  • 0.25 cup Plain yogurt
Instructions
  1. Preheat the oven to 350°F (175°C). Grease a loaf pan or line muffin cups with paper liners.
  2. In a mixing bowl, mash the ripe bananas with a fork until smooth.
  3. In a separate bowl, whisk together the all-purpose flour, baking soda, and salt.
  4. In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Beat in the egg and vanilla extract.
  5. Gradually add the mashed bananas to the butter mixture, mixing well after each addition.
  6. Add the dry ingredients to the wet ingredients, alternating with the plain yogurt. Mix until just combined.
  7. Pour the batter into the prepared loaf pan or muffin cups.
  8. Bake in the preheated oven for 50-60 minutes for a loaf or 20-25 minutes for muffins, or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let cool in the pan for 10 minutes. Then transfer to a wire rack to cool completely.
