Tex-Mex Vegetarian Tortilla Pie
Tex-Mex cuisine is a fusion of Mexican and American flavors, combining traditional Mexican ingredients with American cooking techniques.

Preheat the oven to 375°F (190°C).

In a large skillet, sauté the onion, garlic, and bell peppers until softened.

Add the black beans, corn kernels, chili powder, cumin powder, and salt. Cook for another 5 minutes.

Spread a layer of salsa on the bottom of a baking dish.

Place a tortilla on top of the salsa and spread a layer of the bean and vegetable mixture over it.

Repeat the layers until all the tortillas and filling are used, ending with a layer of tortilla.

Top with shredded cheese.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

Allow the pie to rest for 10 minutes before serving.

Garnish with sliced avocado and fresh cilantro.
