Pierogies are a traditional Polish dish, but this Tex-Mex twist adds a spicy kick to the classic recipe.

Boil the potatoes until tender, then mash them.

In a large bowl, combine the mashed potatoes, all-purpose flour, egg, grated cheddar cheese, finely chopped jalapeno pepper, ground cumin, paprika, and salt. Mix well to form a dough.

Divide the dough into small portions and roll each portion into a circle.

Place a spoonful of the filling (such as seasoned ground beef or cheese) on each circle and fold it in half, sealing the edges.

Boil the pierogies in salted water for a few minutes until they float to the surface.

Heat vegetable oil in a skillet and fry the boiled pierogies until golden brown.

Serve hot with sour cream and garnish with fresh cilantro.
