  1. Preheat the oven to 180°C (350°F).
  2. Grate the carrots and set aside.
  3. In a large bowl, whisk together the flour, baking powder, cinnamon powder, and salt.
  4. In another bowl, beat the eggs, sugar, vegetable oil, and vanilla extract.
  5. Gradually add the dry ingredients to the wet ingredients and mix well.
  6. Fold in the grated carrots and chopped walnuts.
  7. Pour the batter into a greased cake pan.
  8. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Remove from the oven and let it cool for 10 minutes.
  10. In the meantime, prepare the cream cheese frosting by beating the cream cheese, powdered sugar, and lemon juice until smooth.
  11. Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  12. Let the cake rest for 30 minutes before serving.
