Peel and grate the sweet potatoes.

In a large bowl, mix together the grated sweet potatoes, flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.

In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.

Pour the wet ingredients into the dry ingredients and mix until well combined.

Heat a frying pan over medium heat and add a small amount of butter.

Scoop about 1/4 cup of the batter onto the pan and spread it into a circle.

Cook for 2-3 minutes on each side, or until golden brown.
