  1. Peel and grate the sweet potatoes.
  2. In a large bowl, mix together the grated sweet potatoes, flour, brown sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In a separate bowl, whisk together the eggs, milk, melted butter, and vanilla extract.
  4. Pour the wet ingredients into the dry ingredients and mix until well combined.
  5. Heat a frying pan over medium heat and add a small amount of butter.
  6. Scoop about 1/4 cup of the batter onto the pan and spread it into a circle.
  7. Cook for 2-3 minutes on each side, or until golden brown.
  8. Repeat with the remaining batter.
  9. Serve the sweet tater cakes warm with your favorite toppings, such as maple syrup or whipped cream.
