  • 1.5 cup Sweet Potato
  • 1.5 cup All-Purpose Flour
  • 0.5 cup Walnuts
  • 0.75 cup Brown Sugar
  • 2 teaspoon Baking Powder
  • 1 teaspoon Cinnamon
  • 0.5 teaspoon Nutmeg
  • 0.25 teaspoon Salt
  • 2 unit Eggs
  • 0.5 cup Milk
  • 0.25 cup Vegetable Oil
  • 1 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 350°F (175°C). In a large bowl, combine the sweet potato, flour, walnuts, brown sugar, baking powder, cinnamon, nutmeg, and salt. Mix well. In a separate bowl, whisk together the eggs, milk, vegetable oil, and vanilla extract. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Spoon the batter into a greased muffin tin, filling each cup about 2/3 full. Bake for 20-25 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow the muffins to cool in the tin for 5 minutes, then transfer to a wire rack to cool completely. Enjoy!
