Preheat the oven to 200°C (400°F).

Peel and dice the sweet potatoes. Boil them in a pot of salted water until tender, then drain and mash.

In a separate pot, cook the red lentils according to package instructions.

In a large pan, heat olive oil and sauté the onion and garlic until translucent. Add the carrots and cook until slightly softened.

Stir in the tomato paste, thyme, rosemary, salt, and pepper. Cook for another minute.

Add the red wine and cook until reduced by half.

Pour in the vegetable stock and cooked lentils. Simmer for 10 minutes.

Transfer the lentil mixture to a baking dish and spread the mashed sweet potatoes on top.

Bake in the preheated oven for 20-25 minutes, or until the sweet potatoes are golden and the filling is bubbling.

Let it rest for 10 minutes before serving.
