Shepherd’s pie is traditionally made with lamb or mutton, but this vegetarian version replaces the meat with a hearty mix of vegetables and sweet potatoes.

Preheat the oven to 400°F (200°C).

Peel and dice the sweet potatoes. Boil them in a large pot of salted water until tender. Drain and set aside.

In a large skillet, heat olive oil over medium heat. Add the onion and garlic, and sauté until softened.

Add the carrots, celery, corn, and peas. Cook for 5 minutes, stirring occasionally.

Stir in the vegetable broth, tomato paste, thyme, salt, and black pepper. Cook for another 5 minutes.

Transfer the vegetable mixture to a baking dish.

Mash the cooked sweet potatoes with butter and milk until smooth. Season with salt and pepper.

Spread the mashed sweet potatoes over the vegetable mixture in the baking dish.

Sprinkle grated cheddar cheese on top.

Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.
