Shepherd’s Pie traditionally uses lamb, but this vegetarian version substitutes sweet potatoes for the classic mashed potato topping.

  1. Preheat the oven to 400°F (200°C).
  2. Peel and chop the sweet potatoes. Boil them in salted water until tender.
  3. In a separate pan, melt 2 tablespoons of butter and sauté the onion and garlic until softened.
  4. Add the carrots, celery, and peas to the pan and cook for 5 minutes.
  5. Stir in the vegetable stock, tomato paste, thyme, salt, and black pepper. Simmer for 10 minutes.
  6. Drain the sweet potatoes and mash them with 2 tablespoons of butter.
  7. Grease a baking dish with olive oil and spread the vegetable mixture evenly.
  8. Top with the mashed sweet potatoes and sprinkle grated cheese on top.
  9. Bake for 20-25 minutes until the cheese is golden and bubbly.
  10. Let it rest for 10 minutes before serving.
