Ingredients
  • 1.5 cup Sweet Potatoes
  • 2 cup All-Purpose Flour
  • 1 teaspoon Baking Powder
  • 1/2 teaspoon Salt
  • 1 tablespoon Fresh Rosemary
  • 1/2 cup Unsalted Butter
  • 1/2 cup Milk
  • 1 tablespoon Honey
Instructions
  1. Preheat the oven to 425°F (220°C).
  2. In a large bowl, combine the mashed sweet potatoes, flour, baking powder, salt, and chopped rosemary.
  3. Cut in the cold butter until the mixture resembles coarse crumbs.
  4. Stir in the milk and honey until just combined.
  5. Turn the dough out onto a lightly floured surface and knead gently a few times.
  6. Roll out the dough to about 1/2-inch (3 cm) thickness.
  7. Use a biscuit cutter to cut out biscuits and place them on a baking sheet.
  8. Bake for 12-15 minutes, or until golden brown.
