  2. Pierce the sweet potatoes with a fork and bake for 45-60 minutes, or until tender.
  3. In a food processor, blend the gingersnap cookies and pecans until finely ground.
  4. In a bowl, combine the gingersnap pecan mixture with melted butter and press it into the bottom of a pie dish to form the crust.
  5. Remove the sweet potatoes from the oven and let them cool. Once cooled, peel and mash them in a bowl.
