Sweet-Potato Pie with Gingersnap Pecan Crust

Preheat the oven to 350°F (175°C).

Pierce the sweet potatoes with a fork and bake for 45-60 minutes, or until tender.

In a food processor, blend the gingersnap cookies and pecans until finely ground.

In a bowl, combine the gingersnap pecan mixture with melted butter and press it into the bottom of a pie dish to form the crust.

Remove the sweet potatoes from the oven and let them cool. Once cooled, peel and mash them in a bowl.

In a separate bowl, whisk together the mashed sweet potatoes, brown sugar, eggs, vanilla extract, cinnamon, nutmeg, and salt until well combined.

Pour the sweet potato mixture into the prepared crust.

Bake for 50-60 minutes, or until the filling is set.

Remove from the oven and let it cool for at least 2 hours.
