Ingredients
  • 2 pound Sweet potatoes
  • 1 cup Unsalted butter
  • 1 cup Granulated sugar
  • 2 large Eggs
  • 1 cup Evaporated milk
  • 1 teaspoon Ground cinnamon
  • 1/2 teaspoon Ground nutmeg
  • 1/2 teaspoon Vanilla extract
  • 1/4 teaspoon Salt
  • 1 9-inch Pie crust
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. Bake the sweet potatoes until soft, about 1 hour. Let cool, then remove the skin and mash the flesh.
  3. In a large bowl, cream together the butter and sugar. Add the eggs and mix well. Stir in the mashed sweet potatoes.
  4. Gradually add the evaporated milk, cinnamon, nutmeg, vanilla extract, and salt. Mix until well combined.
  5. Pour the mixture into the pie crust. Bake for 45-50 minutes, or until the filling is set.
  6. Remove from the oven and let cool for at least 2 hours before serving.
