Sweet Potato Pie Tiramisu

Preheat the oven to 350°F (175°C).

Peel and dice the sweet potatoes. Boil them until soft, then mash them.

In a mixing bowl, combine the mashed sweet potatoes, granulated sugar, eggs, mascarpone cheese, heavy cream, vanilla extract, and ground cinnamon. Mix well until smooth.

In a separate bowl, pour the brewed coffee.

Dip each ladyfinger into the brewed coffee, making sure to coat both sides.

Arrange a layer of soaked ladyfingers in the bottom of a baking dish.

Spread a layer of the sweet potato mixture over the ladyfingers.

Repeat the layers until all the ingredients are used, ending with a layer of sweet potato mixture.

Dust the top with cocoa powder.

Bake in the preheated oven for 25-30 minutes, or until the top is set.
