  2. Peel and dice the sweet potatoes. Boil them until soft, then mash them.
  3. In a mixing bowl, combine the mashed sweet potatoes, granulated sugar, eggs, mascarpone cheese, heavy cream, vanilla extract, and ground cinnamon. Mix well until smooth.
  4. In a separate bowl, pour the brewed coffee.
  5. Dip each ladyfinger into the brewed coffee, making sure to coat both sides.
  6. Arrange a layer of soaked ladyfingers in the bottom of a baking dish.
  7. Spread a layer of the sweet potato mixture over the ladyfingers.
  8. Repeat the layers until all the ingredients are used, ending with a layer of sweet potato mixture.
  9. Dust the top with cocoa powder.
  10. Bake in the preheated oven for 25-30 minutes, or until the top is set.
  11. Remove from the oven and let it rest for 3 hours.
  12. Serve chilled and enjoy!
