  1. Preheat the oven to 425°F (220°C).
  2. Pierce the sweet potatoes with a fork and bake them for about 45-60 minutes, or until soft.
  3. Remove the sweet potatoes from the oven and let them cool.
  4. Reduce the oven temperature to 350°F (175°C).
  5. Peel the sweet potatoes and mash them in a large bowl.
  6. Add butter, sugar, evaporated milk, vanilla extract, ground cinnamon, ground nutmeg, salt, and eggs to the mashed sweet potatoes. Mix well.
  7. Pour the mixture into the pie crust.
  8. Bake for 55-60 minutes, or until the filling is set.
  9. Remove from the oven and let it cool for at least 2 hours before serving.
  10. Serve and enjoy!
