Sweet potatoes are often called kumara in New Zealand and are a popular ingredient in traditional Maori cuisine.

  1. Preheat the oven to 180°C.
  2. Peel and chop the sweet potatoes into small cubes.
  3. Rinse the lentils.
  4. In a large pan, heat olive oil over medium heat and sauté the onion and garlic until softened.
  5. Add the sweet potatoes, lentils, thyme, rosemary, salt, and black pepper to the pan. Stir well.
  6. Pour in the vegetable stock and bring to a simmer. Cook for 15-20 minutes or until the sweet potatoes and lentils are tender.
  7. Remove from heat and let it cool slightly.
  8. Transfer the mixture to a pie dish lined with a pie crust.
  9. Cover with another pie crust and seal the edges.
  10. Bake in the preheated oven for 25-30 minutes or until the crust is golden brown.
  11. Remove from the oven and let it rest for 10 minutes before serving.
