Ingredients
  • 400 gram Sweet potatoes
  • 1 cup Kale
  • 1 medium Onion
  • 2 clove Garlic
  • 1 cup Breadcrumbs
  • 1 large Egg
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoon Olive oil
Instructions
  1. Preheat the oven to 400°F (200°C).
  2. Peel and grate the sweet potatoes.
  3. Finely chop the kale, onion, and garlic.
  4. In a large bowl, combine the grated sweet potatoes, chopped kale, onion, garlic, breadcrumbs, egg, salt, and pepper. Mix well.
  5. Shape the mixture into small patties.
  6. Heat olive oil in a pan over medium heat.
  7. Cook the patties for 3-4 minutes on each side until golden brown.
  8. Transfer the patties to a baking sheet and bake for 10-12 minutes.
  9. Allow the veggie cakes to rest for 5 minutes before serving.
  10. Serve hot and enjoy!
