Peel and chop the sweet potatoes, then boil them until tender. Drain and mash.

In a large pan, heat olive oil and sauté the onion, carrots, and garlic until softened.

Add lentils, vegetable stock, tomato paste, thyme, rosemary, salt, and black pepper. Cook for 10 minutes.

Stir in the frozen peas and cook for another 2 minutes.

Transfer the lentil mixture to a baking dish and spread the mashed sweet potatoes on top.
