Ingredients
  • 2 cup Sweet Potatoes
  • 2 cup Pancake Mix
  • 1 cup Milk
  • 2 Eggs
  • 1 cup Sugar
  • 2 tablespoon Vegetable Oil
  • 1 teaspoon Cinnamon
  • 1 teaspoon Nutmeg
  • 1 teaspoon Vanilla Extract
  • 1 cup Whipped Cream
  • 2 tablespoon Maple Syrup
Instructions
  1. Peel and grate the sweet potatoes.
  2. In a large bowl, combine the grated sweet potatoes, pancake mix, milk, eggs, sugar, vegetable oil, cinnamon, nutmeg, and vanilla extract. Mix well.
  3. Heat a frying pan over medium heat and lightly grease it.
  4. Pour the batter into the frying pan, spreading it evenly.
  5. Cook for about 5 minutes on each side, or until golden brown.
  6. Remove the cake from the pan and let it rest for 10 minutes.
  7. Serve with whipped cream and maple syrup.
