Peel and dice the sweet potatoes. Boil them until tender, then drain and mash.

Peel and slice the apples.

In a large bowl, combine the mashed sweet potatoes, sliced apples, granulated sugar, brown sugar, all-purpose flour, cinnamon, nutmeg, salt, melted butter, eggs, and vanilla extract. Mix well.

Place the pie crust in a 9-inch pie dish. Pour the sweet potato apple filling into the crust.

Bake for 50-60 minutes, or until the crust is golden brown and the filling is set.
