  1. Preheat the oven to 180°C.
  2. Peel and chop the sweet potatoes into small cubes. Boil them in salted water until tender.
  3. While the sweet potatoes are boiling, heat olive oil in a large pan and cook the chicken breast until browned. Remove from the pan and set aside.
  4. In the same pan, add diced onion, carrots, and minced garlic. Cook until softened.
  5. Add the cooked chicken back to the pan along with frozen peas, thyme, salt, and black pepper. Stir well.
  6. In a separate saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute.
  7. Slowly whisk in chicken stock and milk. Cook until thickened.
  8. Drain the boiled sweet potatoes and mash them with a fork or potato masher. Season with salt and black pepper.
  9. Transfer the chicken and vegetable mixture to a baking dish. Spread the mashed sweet potatoes on top.
  10. Bake in the preheated oven for 25-30 minutes, or until the top is golden and the filling is bubbling.
  11. Let it rest for 10 minutes before serving.
