In a mixing bowl, combine the cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Stir until the cherries are coated.

Roll out the pie crusts and cut them into circles to fit your individual ramekins or pie dishes.

Divide the cherry mixture evenly among the ramekins or pie dishes.

Place the pie crust circles on top of the cherry mixture, pressing the edges to seal.

Brush the tops of the pies with beaten egg and sprinkle with turbinado sugar.
