  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine sweet cherries, granulated sugar, cornstarch, lemon juice, and vanilla extract. Mix well.
  4. Pour the cherry mixture into the pie crust.
  5. Dot the top of the filling with butter.
  6. Roll out the second pie crust and cut it into strips.
  7. Create a lattice pattern on top of the cherry filling with the pie crust strips.
  8. In a small bowl, beat the egg with water to make an egg wash.
  9. Brush the lattice crust with the egg wash.
  10. Bake the pie in the preheated oven for 45 minutes, or until the crust is golden brown.
  11. Remove the pie from the oven and let it cool for at least 2 hours.
  12. Dust the top of the pie with powdered sugar before serving.
