Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a medium bowl, combine the chocolate cookie crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
  3. Bake the crust in the preheated oven for 10 minutes, then remove and let cool.
  4. In a saucepan, whisk together the remaining 1/4 cup of granulated sugar, cornstarch, salt, and milk. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
  5. Remove the saucepan from the heat and add the chopped chocolate. Stir until the chocolate is completely melted.
  6. In a separate bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot chocolate mixture to temper the eggs, then pour the tempered eggs back into the saucepan with the remaining chocolate mixture.
  7. Cook the mixture over medium heat, stirring constantly, for an additional 2 minutes.
  8. Remove the saucepan from the heat and stir in the vanilla extract. Let the chocolate cream mixture cool slightly.
  9. Pour the chocolate cream mixture into the cooled crust and smooth the top.
  10. Cover the pie with plastic wrap, making sure the plastic wrap touches the surface of the chocolate cream to prevent a skin from forming.
  11. Refrigerate the pie for at least 3 hours, or until set.
  12. Before serving, top the pie with whipped cream and garnish with chocolate shavings.
  13. Slice and serve chilled.
