Sunshine’s Chocolate-Cream Pie
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C).
-
In a medium bowl, combine the chocolate cookie crumbs, melted butter, and 2 tablespoons of granulated sugar. Press the mixture into the bottom and up the sides of a 9-inch pie dish.
-
Bake the crust in the preheated oven for 10 minutes, then remove and let cool.
-
In a saucepan, whisk together the remaining 1/4 cup of granulated sugar, cornstarch, salt, and milk. Cook over medium heat, stirring constantly, until the mixture thickens and comes to a boil.
-
Remove the saucepan from the heat and add the chopped chocolate. Stir until the chocolate is completely melted.
-
In a separate bowl, whisk the egg yolks. Gradually whisk in about 1/2 cup of the hot chocolate mixture to temper the eggs, then pour the tempered eggs back into the saucepan with the remaining chocolate mixture.
-
Cook the mixture over medium heat, stirring constantly, for an additional 2 minutes.
-
Remove the saucepan from the heat and stir in the vanilla extract. Let the chocolate cream mixture cool slightly.
-
Pour the chocolate cream mixture into the cooled crust and smooth the top.
-
Cover the pie with plastic wrap, making sure the plastic wrap touches the surface of the chocolate cream to prevent a skin from forming.
-
Refrigerate the pie for at least 3 hours, or until set.
-
Before serving, top the pie with whipped cream and garnish with chocolate shavings.
-
Slice and serve chilled.
