Summer Pudding Mousse Cake
Summer pudding is a traditional British dessert that typically consists of sliced bread soaked in fruit juice and layered with berries. This recipe adds a twist by turning it into a mousse cake!

Line the base and sides of a cake tin with the sliced bread.

In a saucepan, combine the mixed berries and sugar. Cook over medium heat until the berries release their juices and the sugar dissolves.

Remove from heat and stir in the gelatin until dissolved. Allow the mixture to cool.

In a separate bowl, whip the cream until soft peaks form. Gently fold in the cooled berry mixture and vanilla extract.

Pour the mousse mixture into the prepared cake tin, smoothing the top. Cover with additional slices of bread.

Place a weight on top of the cake tin and refrigerate for at least 4 hours, or until set.

Once set, remove the cake from the tin and garnish with fresh mint leaves.
