  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix almond flour and melted coconut oil until well combined. Press the mixture into a pie dish to form the crust.
  3. Bake the crust for 10 minutes, then remove from the oven and let it cool.
  4. In a saucepan, combine strawberries, lemon juice, agave syrup, cornstarch, water, vanilla extract, and a pinch of salt. Cook over medium heat until the mixture thickens, stirring constantly.
  5. Pour the strawberry filling into the cooled crust and refrigerate for at least 2 hours or until set.
  6. Before serving, garnish with coconut cream and fresh mint leaves. Enjoy!
