  • 1.5 cup Crust
  • 1 cup Lemon Filling
  • 1 cup Meringue Topping
  • 1 teaspoon Lemon Zest
  • 2 tablespoon Lemon Juice
  • 1 tablespoon Cornstarch
  • 0.5 cup Egg Whites
  • 0.5 cup Sugar Substitute
  • 0.25 teaspoon Cream of Tartar
  • 0.5 teaspoon Vanilla Extract
Instructions
  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, combine the crust ingredients and press into a 9-inch pie dish.
  3. Bake the crust for 10 minutes, then remove from the oven and let cool.
  4. In a saucepan, whisk together the lemon filling ingredients until well combined. Cook over medium heat, stirring constantly, until the mixture thickens.
  5. Pour the lemon filling into the cooled crust.
  6. In a separate bowl, beat the egg whites, sugar substitute, cream of tartar, and vanilla extract until stiff peaks form.
  7. Spread the meringue topping over the lemon filling, making sure to seal the edges.
  8. Bake the pie for 10-12 minutes, or until the meringue is golden brown.
  9. Remove from the oven and let cool for at least 2 hours before serving.
  10. Garnish with lemon zest before serving.
