Preheat the oven to 350°F (175°C). Grease a cake pan.

In a large bowl, mash the ripe bananas until smooth.

Add the shio-koji and amazake to the mashed bananas and mix well.

In a separate bowl, combine the whole wheat flour, baking powder, baking soda, cinnamon powder, and salt.

Gradually add the dry ingredients to the banana mixture, stirring until just combined.
