  • 2.5 cup All-purpose flour
  • 2 teaspoon Baking powder
  • 1 teaspoon Cinnamon
  • 1 teaspoon Ground ginger
  • 0.5 teaspoon Ground nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1.5 cup Granulated sugar
  • 3 Eggs
  • 2 teaspoon Vanilla extract
  • 1.25 cup Whole milk
  • 2 cup Powdered sugar
  • 1 cup Cream cheese, softened
  • 1 cup Heavy cream
  • 0.5 teaspoon Ground cloves
  • 0.5 teaspoon Ground allspice
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour three 8-inch round cake pans.
  2. In a medium bowl, whisk together the flour, baking powder, cinnamon, ginger, nutmeg, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients alternately with the milk, beginning and ending with the dry ingredients.
  5. Divide the batter evenly between the prepared pans. Smooth the tops with a spatula.
  6. Bake for 20-25 minutes, or until a toothpick inserted into the center comes out clean. Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.
  7. In a small bowl, whisk together the powdered sugar, cream cheese, heavy cream, cloves, and allspice until smooth and creamy.
  8. Place one cake layer on a serving plate and spread a layer of the cream cheese frosting on top. Repeat with the remaining cake layers and frosting.
  9. Refrigerate the cake for at least 1 hour before serving to allow the flavors to meld together.
