Preheat the oven to 350°F (175°C). Grease and flour a 9-inch round cake pan.

In a large mixing bowl, combine the pancake mix, mashed bananas, vegetable oil, plant-based milk, vanilla extract, and maple syrup. Mix well.

In a separate bowl, whisk together the all-purpose flour, baking powder, baking soda, and salt.

Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

Pour the batter into the prepared cake pan and smooth the top.

Bake for 40-45 minutes, or until a toothpick inserted into the center comes out clean.

Remove from the oven and let cool in the pan for 10 minutes. Then, transfer to a wire rack to cool completely.
