  • 1 cup Cake flour
  • 1 teaspoon Baking powder
  • 0.25 teaspoon Salt
  • 4 large Eggs
  • 1 cup Granulated sugar
  • 1 teaspoon Vanilla extract
  • 2 tablespoon Unsalted butter
  • 0.5 cup Whole milk
  • 1.5 cup Fresh strawberries
  • 0.5 cup Powdered sugar
  • 1 cup Mascarpone cheese
  • 0.5 cup Heavy cream
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and line a 10x15-inch jelly roll pan with parchment paper.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, beat the eggs and granulated sugar until thick and pale yellow. Stir in the vanilla extract.
  4. In a small saucepan, melt the butter over low heat. Add the milk and heat until warm.
  5. Gradually add the dry ingredients to the egg mixture, alternating with the warm milk mixture. Mix until just combined.
  6. Pour the batter into the prepared jelly roll pan and spread it evenly.
  7. Bake for 10-12 minutes or until the cake is golden and springs back when lightly touched.
  8. While the cake is still warm, sprinkle powdered sugar over a clean kitchen towel and invert the cake onto the towel. Remove the parchment paper.
  9. Starting from the shorter end, roll the cake up tightly with the towel. Allow it to cool completely.
  10. In a mixing bowl, beat the mascarpone cheese, heavy cream, and powdered sugar until smooth and creamy.
  11. Gently unroll the cooled cake and spread the mascarpone cream evenly over the surface.
  12. Place the fresh strawberries on top of the cream.
  13. Carefully roll the cake back up, using the towel to help you.
  14. Transfer the cake to a serving platter and refrigerate for at least 1 hour before serving.
  15. Dust with powdered sugar and garnish with additional strawberries, if desired.
  16. Slice and serve chilled.
