Ingredients
  • 2 cup Strawberries
  • 2 cup Rhubarb
  • 1 cup Granulated sugar
  • 3 tablespoon Cornstarch
  • 2 tablespoon Lemon juice
  • 0.25 teaspoon Salt
  • 1 unit Pie crust
  • 1 unit Egg
  • 1 tablespoon Water
Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the sliced strawberries, chopped rhubarb, granulated sugar, cornstarch, lemon juice, and salt. Mix well and let it sit for 15 minutes.
  3. Roll out the pie crust and place it in a pie dish.
  4. Pour the strawberry rhubarb filling into the pie crust.
  5. Roll out the second pie crust and cut it into strips for lattice topping.
  6. Arrange the pie crust strips in a lattice pattern on top of the filling.
  7. Beat the egg with water to make an egg wash. Brush the lattice crust with the egg wash.
  8. Bake the pie in the preheated oven for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
  9. Remove the pie from the oven and let it cool for at least 1 hour before serving.
