  1. Preheat the oven to 375°F (190°C).
  2. In a large bowl, combine the strawberries, rhubarb, granulated sugar, cornstarch, lemon juice, and vanilla extract.
  3. Roll out one pie crust and line a 9-inch pie dish with it.
  4. Pour the strawberry rhubarb mixture into the pie crust.
  5. Dot the top of the filling with butter.
  6. Roll out the second pie crust and place it on top of the filling.
  7. Trim and crimp the edges of the pie crust.
  8. Brush the beaten egg over the top crust.
  9. Cut a few slits in the top crust to allow steam to escape.
  10. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
  11. Remove from the oven and let it cool for at least 1 hour.
  12. Dust with powdered sugar before serving.
