Ingredients
  • 2 cup All-purpose flour
  • 1 teaspoon Baking powder
  • 1/2 teaspoon Salt
  • 1 cup Unsalted butter, softened
  • 1 1/2 cup Granulated sugar
  • 3 Eggs
  • 1 teaspoon Vanilla extract
  • 1/4 cup Milk
  • 1 1/2 cup Fresh strawberries, chopped
  • 1 cup Heavy cream
  • 2 tablespoon Fresh basil leaves, chopped
  • 2 tablespoon Powdered sugar
Instructions
  1. Preheat the oven to 350°F (175°C). Grease and flour a 9x5-inch loaf pan.
  2. In a medium bowl, combine the flour, baking powder, and salt. Set aside.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually mix in the dry ingredients alternately with the milk, beginning and ending with the dry ingredients. Gently fold in the chopped strawberries.
  5. Pour the batter into the prepared loaf pan and smooth the top. Bake for 55-60 minutes, or until a toothpick inserted into the center comes out clean.
  6. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  7. In a chilled mixing bowl, whip the heavy cream until soft peaks form. Fold in the chopped basil leaves and powdered sugar.
  8. Serve slices of the strawberry pound cake with a dollop of basil whipped cream on top.
