  1. Crush the digestive biscuits and mix them with melted butter. Press the mixture into the base of a springform cake tin.
  2. Dissolve the gelatin sheets in cold water.
  3. Puree half of the strawberries and mix with sugar.
  4. Whip the cream until soft peaks form.
  5. Heat the dissolved gelatin sheets in a saucepan until melted.
  6. Fold the gelatin mixture into the whipped cream.
  7. Add the strawberry puree, vanilla extract, and lemon juice to the cream mixture and gently fold together.
  8. Pour the cream mixture onto the biscuit base and refrigerate for at least 2 hours.
  9. Decorate the cake with remaining strawberries and grated white chocolate.
  10. Serve chilled.
