Strawberry JELL-O Poke Cake
Poke cakes became popular in the 1970s and are named after the process of poking holes in the cake to allow the liquid (in this case, JELL-O) to seep in and create a moist and flavorful dessert.

Preheat the oven to 350°F (175°C) and grease a 9x13-inch baking pan.

In a large mixing bowl, combine the white cake mix, water, vegetable oil, and eggs. Mix until well combined.

Pour the batter into the prepared baking pan and smooth the top.

Bake for 25 minutes or until a toothpick inserted into the center comes out clean.

Remove the cake from the oven and let it cool for 10 minutes.

Using a fork or skewer, poke holes all over the cake.

In a separate bowl, dissolve the strawberry JELL-O mix in boiling water. Stir until fully dissolved.

Add the cold water to the JELL-O mixture and stir well.

Pour the JELL-O mixture over the cake, making sure to fill the holes.

Refrigerate the cake for at least 2 hours or until the JELL-O is set.

Once the cake has chilled, spread the whipped topping over the top.
