Strawberries are not technically berries, but rather an aggregate fruit!

  1. Preheat the oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a medium bowl, whisk together the cake flour, baking powder, and salt.
  3. In a large bowl, cream together the butter and granulated sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla extract.
  4. Gradually add the dry ingredients to the butter mixture, alternating with the milk. Fold in the chopped strawberries.
  5. Divide the batter evenly between the prepared cake pans. Smooth the tops with a spatula.
  6. Bake for 25-30 minutes, or until a toothpick inserted into the center of the cakes comes out clean.
  7. Remove the cakes from the oven and let them cool in the pans for 10 minutes. Then transfer to a wire rack to cool completely.
  8. In a chilled bowl, whip the cream and powdered sugar until stiff peaks form.
  9. Place one cake layer on a serving plate. Spread half of the whipped cream over the top. Place the second cake layer on top and spread the remaining whipped cream over the top.
  10. Garnish with fresh strawberries and mint leaves.
  11. Refrigerate for at least 2 hours before serving.
