  1. Preheat the oven to 375°F (190°C).
  2. Roll out one pie crust and place it in a pie dish.
  3. In a large bowl, mix together sliced strawberries, sugar, cornstarch, lemon juice, and vanilla extract.
  4. Pour the strawberry mixture into the pie crust.
  5. Roll out the second pie crust and place it on top of the strawberry filling.
  6. Trim and crimp the edges of the pie crust.
  7. Make a few slits in the top crust to allow steam to escape.
  8. Bake for 45 minutes, or until the crust is golden brown and the filling is bubbly.
