Preheat the oven to 325°F (163°C) and line a muffin tin with cupcake liners.

In a medium bowl, combine the graham cracker crumbs and melted butter. Press a spoonful of the mixture into the bottom of each cupcake liner to form the crust.

In a large bowl, beat the cream cheese, sugar, and vanilla extract until smooth. Add the eggs, one at a time, beating well after each addition. Gradually add the flour and mix until just combined.

Gently fold in the diced strawberries. Divide the batter evenly among the cupcake liners.

Bake for 18-20 minutes, or until the edges are set and the centers are slightly jiggly. Remove from the oven and let cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
