  1. Preheat the oven to 375°F (190°C).
  2. Roll out the pie crust and place it in a 9-inch pie dish.
  3. In a large bowl, combine the rhubarb, sugar, flour, and cinnamon. Mix well.
  4. Pour the rhubarb mixture into the pie crust.
  5. Dot the top of the filling with small pieces of butter.
  6. Roll out the remaining pie crust and cut it into strips.
  7. Arrange the strips in a lattice pattern on top of the filling.
  8. In a small bowl, beat the egg with milk to make an egg wash.
  9. Brush the lattice crust with the egg wash.
  10. Bake the pie for 45-50 minutes, or until the crust is golden brown and the filling is bubbly.
