  2. Roll out the puff pastry sheets and line a pie dish with one of the sheets.
  3. Spiralize the zucchini, carrots, and red bell pepper.
  4. In a pan, heat olive oil and sauté the onion and garlic until translucent.
  5. Add the spiralized vegetables to the pan and cook for 5 minutes.
  6. Season with salt, black pepper, fresh thyme, and rosemary.
  7. Transfer the cooked vegetables to the prepared pie dish.
  8. Cover with the second sheet of puff pastry and seal the edges.
  9. Bake in the preheated oven for 35-40 minutes, until the pastry is golden brown.
  10. Allow the pie to rest for 10 minutes before serving.
