Preheat the oven to 350°F (175°C).

In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until softened.

Add spinach and corn kernels to the skillet, and cook until the spinach wilts. Remove from heat and let cool.

In a large bowl, whisk together eggs, milk, flour, baking powder, salt, and black pepper.

Stir in the cooked spinach and corn mixture, and grated cheddar cheese.

Pour the mixture into a greased pie dish.

Bake in the preheated oven for 40 minutes, or until the top is golden brown and the center is set.
