Matzoh is an unleavened bread traditionally eaten during the Jewish holiday of Passover.

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, heat olive oil over medium heat. Add chopped onion and minced garlic, and cook until onion is translucent.
  3. Add spinach to the skillet and cook until wilted. Remove from heat and set aside.
  4. In a separate bowl, whisk together eggs, milk, salt, and pepper.
  5. Break matzoh sheets into small pieces and soak them in water for a few seconds to soften. Drain and squeeze out excess water.
  6. In a greased baking dish, layer half of the soaked matzoh pieces.
  7. Spread the cooked spinach mixture over the matzoh layer.
  8. Pour the egg mixture evenly over the spinach layer.
  9. Top with the remaining soaked matzoh pieces and sprinkle with Parmesan cheese.
  10. Bake in the preheated oven for 30-35 minutes, or until the top is golden brown and the pie is set.
  11. Allow the pie to rest for 10 minutes before serving.
  12. Serve warm and enjoy!
