Spiderweb Whoopie Pies
Ingredients
Instructions
-
Preheat the oven to 350°F (175°C) and line baking sheets with parchment paper.
-
In a medium bowl, whisk together the flour, cocoa powder, baking powder, and salt.
-
In a separate large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the egg, milk, and vanilla extract, and mix until well combined.
-
Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
-
Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart. Flatten each mound slightly with the back of a spoon.
-
Bake for 10-12 minutes, or until the cookies are set. Allow them to cool on the baking sheets for 5 minutes, then transfer to wire racks to cool completely.
-
For the filling, in a mixing bowl, beat together the powdered sugar, softened butter, vanilla extract, milk, and black food coloring gel until smooth.
-
Spread a generous amount of filling onto the flat side of half of the cookies. Top with the remaining cookies to create sandwich pies.
-
For the spiderweb decoration, in a small bowl, whisk together the powdered sugar, milk, corn syrup, and vanilla extract until smooth. Transfer the mixture to a piping bag fitted with a small round tip.
-
Pipe concentric circles onto the top of each whoopie pie. Using a toothpick or skewer, drag lines from the center outwards to create a spiderweb pattern.
-
Allow the spiderweb whoopie pies to rest for 15 minutes to allow the decoration to set.
-
Serve and enjoy!
