  2. Grate the carrots and set aside.

  5. Gradually add the dry ingredients to the wet ingredients, mixing well.
  6. Fold in the grated carrots.
  7. Pour the batter into a greased cake pan and smooth the top.
  8. Bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  9. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
  10. In the meantime, prepare the cream cheese frosting by beating together the cream cheese, butter, powdered sugar, and vanilla extract until smooth and creamy.
