  1. Preheat the oven to 180°C (350°F). Grease and flour a cake pan.
  2. Peel and grate the parsnips.
  3. In a large bowl, combine the grated parsnips, flour, brown sugar, vegetable oil, eggs, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt. Mix well.
  4. Fold in the chopped walnuts.
  5. Pour the batter into the prepared cake pan and smooth the top.
  6. Bake in the preheated oven for 40 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for 10 minutes. Then transfer it to a wire rack to cool completely.
  8. In a separate bowl, beat the cream cheese, powdered sugar, vanilla extract, and lemon juice until smooth and creamy.
  9. Once the cake has cooled, spread the cream cheese frosting evenly over the top.
  10. Serve and enjoy!
