  • 200 grams Carrots
  • 250 grams All-Purpose Flour
  • 200 grams Brown Sugar
  • 2 teaspoon Baking Powder
  • 2 teaspoon Ground Cinnamon
  • 1 teaspoon Ground Ginger
  • 1 teaspoon Ground Nutmeg
  • 0.5 teaspoon Salt
  • 1 cup Vegetable Oil
  • 3 Eggs
  • 2 teaspoon Vanilla Extract
  • 250 grams Cream Cheese
  • 100 grams Butter
  • 200 grams Powdered Sugar
  • 1 tablespoon Lemon Juice
Instructions
  1. Preheat the oven to 350°F/175°C.
  2. Grease and flour a 9x13 inch (23x33 cm) baking pan.
  3. In a large bowl, mix together the carrots, flour, brown sugar, baking powder, cinnamon, ginger, nutmeg, and salt.
  4. Add the vegetable oil, eggs, and vanilla extract. Mix well until all ingredients are combined.
  5. Transfer the batter into the prepared baking pan.
  6. Bake in the preheated oven for 35-40 minutes or until a toothpick inserted into the center comes out clean.
  7. Remove the cake from the oven and let it cool in the pan for 10 minutes.
  8. Remove the cake from the pan and let it cool completely on a wire rack.
  9. In a separate bowl, beat the cream cheese and butter until creamy.
  10. Gradually add powdered sugar and lemon juice, beating well after each addition.
  11. Once the cake is completely cooled, spread the cream cheese frosting over the top.
  12. Refrigerate for at least 30 minutes before serving. Enjoy!
